Chicken Broccoli Casserole
Ingredients: yields 6-8 servings
1 lbs broccoli, or enough to cover the bottom of a 9x13” pan
2 cups cooked chicken, chopped
Sharp cheddar cheese, coarsely grated
2 (10.5 oz) cans of cream of chicken soup
2 cups mayo
Juice of half a lemon or to taste
Bread crumbs
Preheat oven to 350F. Prepare broccoli as you would like. Drain and pat dry. In a 9x13” pan, layer the broccoli, chicken, then cheese. In a medium sized bowl, combine the cream of chicken soup, mayo, and lemon. Pour the mixture over the other ingredients in the pan. Top with bread crumbs to your liking. Bake for 35-40 minutes or until slightly golden and bubbling on the sides. Serve over rice.
