Coconut Rice

 

Ingredients:

2 cups rice of choice (we usually prefer jasmine)

13.6 oz can unsweetened coconut milk, shaken or stirred until smooth

2 1/4 cups water

1/2 tsp salt

Add all ingredients to a rice cooker, mix well. Cover and cook on the white rice setting. If you don’t have a rice cooker, place all ingredients in a pot, mix well, and bring to a boil. Turn temp to low and cook for about 30 mins, or until all liquid is absorbed and rice is soft.
