Yogurt

Ingredients:

2 tablespoons of yogurt from previous batch (or 10 Gastrus tablets, crushed)

2 tablespoons prebiotic fiber (inulin or raw potato starch)

1 quart half-and-half

In a medium to large bowl, combine the probiotic, prebiotic fiber, and 2 tablespoons of half-and-half. Make a slurry to ensure the prebiotic fiber does not clump. Stir until well mixed. Stir in the remaining half-and-half. Pour into jars and cover with lid loosely, place in your fermenting device, and ferment at 100°F for 36 hours. We use our instant pot, with a little bit of water in the basin and place the jars on the wire rack. Select yogurt, low setting, and start.


Once finished, there will be some condensation on the outside of the jars, just wipe off and tighten lids. Store in fridge.


Mix it with berries & homemade granola!
