Vanilla Coconut Granola

Ingredients: add or remove whatever ingredients however you like

2 cups old-fashioned oats

3/4 cups shredded coconut, sweetened or unsweetened

1/2 cups chopped almonds

1/3 cups pepitas

1 tsp cinnamon

1/4 tsp salt

4 Tbs coconut oil, melted

1 tsp vanilla extract

1/4 tsp coconut extract

Preheat oven to 300F. Line a standard size cookie sheet with parchment paper or a silpat.
In a large bowl, combine the first 6 ingredients. In a small bowl, combine remaining 3 ingredients. Pour liquid mixture over dry ingredients, stirring until well coated. Pour granola mixture onto prepared cookie sheet and spread into an even layer. Bake until desired texture, stirring the mixture every 10 minutes. I usually bake mine for a total of 30-35 minutes. Store in an airtight container or jar.
