Mango Salsa Salmon

this pic has chicken, not salmon :)

Ingredients:

4 salmon fillets (or boneless, skinless chicken thighs)

Salmon topping:

2 tsp smoked paprika

2 tsp soy sauce

2 tsp hot sauce of choice (we used cholula)

2 tbsp minced garlic

2 tbsp maple syrup

Salt to taste

Mango salsa:

4 small mangoes, cubed

2 avocados, cubed

1 cucumber, chopped

1 jalapeƱo, diced

1/2 red onion, diced

Juice of 2 limes

Cilantro, chopped (optional)


Preheat oven to 400F. Place salmon on a lined cookie sheet. Combine all ingredients for the topping in a bowl. Spoon topping on salmon. Bake in oven for 10-12 mins*. Combine all ingredients for mango salsa while salmon is cooking. Serve with coconut rice.

*if cooking chicken instead of salmon, bake at 400F for 30 mins. Chop and serve.
