Wesley’s Birthday Carrot Cake
Cake Ingredients:
2 cups sugar
2 cups flour
1 tsp salt
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 1/2 cups oil
4 eggs
3 cups carrots (4-5 large carrots), coarsely grated
Preheat oven to 350F. Grease and flour a 9x13 pan. In a medium sized bowl, sift dry ingredients. In a small bowl, beat together oil and eggs. As wet ingredients to dry ingredients and mix until almost combined. Fold in carrots until just combined. Pour into prepared pan and bake for 30-35 minutes or until done. Let cool before frosting. Make sure your cream cheese and butter for the frosting are getting to room temp!
Cream Cheese Frosting Ingredients:
8 oz cream cheese, at room temp
1/2 cup butter, at room temp
4 cups powdered sugar, sifted
2 tsp vanilla
1 Tbsp milk
Cream together cream cheese and butter until well mixed. Add vanilla and milk and mix. Slowly add powdered sugar until you’ve reached your desired consistency and taste. Once cake is completely cooled, frost and serve with candles for the bday boy!
This recipe is from Wes’s Aunt Sarah! His mom would make this for his birthday, per his request!
