Syracuse Salt Potatoes

Ingredients:

2 lbs small potatoes (fingerlings or red & gold potatoes), whole only! do not cut!

1 cup kosher salt

5 cups cold water

melted butter to serve


Wash potatoes and place in a medium saucepan. Add salt. Yes, it is an entire cup! Add water and bring to a boil. This will take longer than normal because the water is now denser because of all the salt! ✨science✨ Once at a boil, simmer for 15-20 minutes or until fork tender. Try not to poke too many times, otherwise, the potatoes you poke will absorb too much salt now that the membrane is broken. Once fork tender, drain potatoes. The potatoes will quickly dry and leave a light, dusty, coating of salt. Serve hot and dip in melted butter. Or cheese fondue!
