Zucchini Bread

 


Ingredients: yields 1 standard loaf

1 1/2 cups all-purpose flour

1 tsp cinnamon

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp nutmeg

1/4 tsp baking powder

1 egg

1/2 cup sugar (up to 1 cup if you like them sweeter)

1 cup grated zucchini

1/4 cup oil

1/4 tsp lemon zest

1/2 cup chopped walnuts, optional


Preheat oven to 350F and prepare a loaf pan.

In a mixing bowl, stir together flour, cinnamon, baking soda, salt, nutmeg, and baking powder; set aside.

In a larger mixing bowl, beat egg then mix in sugar and zucchini. Add oil and lemon zest; mix well.

Stir flour mixture into zucchini mixture. Gently fold in nuts if you’re using them.

Turn batter into prepared pan. Bake in oven for 50 mins or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes.

Remove from pan and cool thoroughly on a rack before slicing.
