Oven Pancakes
Ingredients: yields 4 servings (picture is a half batch)
6 Tbsp butter, cut into pieces
1 cup milk
6 eggs
1/4 tsp salt
1 cup flour
Turn oven to 450F. Put butter in a 13x9 inch dish. Place pan in oven to melt butter while oven preheats. Check butter often to make sure you take it out before it starts to brown.
While butter melts, whisk all ingredients together well, or blend in a blender. Once butter has melted completely, remove pan from oven and carefully pour mixture into pan. Do not stir. Bake for 18 minutes or until high and puffy and golden brown. Serve immediately.
