Meatloaf
Ingredients: yields 6 servings
1 Tbs avocado oil
3 cups onion, diced (about 3 onions)
1 tsp fresh thyme, chopped
2 tsp kosher salt
1 tsp ground black pepper
3 Tbs worcestershire sauce
1/3 cup chicken stock
1 Tbs tomato paste
2 1/2 lbs ground beef (81% lean)
1/2 cup plain bread crumbs
2 large eggs, beaten
1/2 cup ketchup (or enough to cover loaf)
Preheat oven to 325F. Prepare a cookie sheet with parchment paper.
In a medium sauce pan, heat up oil. Add onions, thyme, salt, and pepper and cook over medium-low heat for about 8-10 mins, or until onions are translucent. Off the heat, add the worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine ground beef, onion mixture, bread crumbs, and eggs and mix lightly with a fork or by hand, being careful not to mash, otherwise the loaf will be dense. Dump mixture onto prepared cookie sheet and shape into a loaf. Spread ketchup evenly on top.
Bake for 1 to 1 1/4 hrs, until internal temp is 160F and meatloaf is cooked through.
