Banana Bread

 

Ingredients: yields 1 loaf

2-3 medium overripe bananas

1/3 cup butter, unsalted or salted, melted

1/2 tsp baking soda

1 pinch salt

1/2 cup sugar (give or take depending on how sweet you like it)

1 large egg, beaten

1 tsp vanilla extract

1 1/2 cups flour


Preheat oven to 350F. Grease or line a loaf pan.

In a medium sized mixing bowl, mash bananas. Stir in melted butter. Mix in baking soda and salt. Add sugar, egg, and vanilla extract and stir until well combined. Mix in flour until just combined. Don’t over mix or the loaf will be tough.

Pour batter into prepared loaf pan. Bake for 50 mins or until a toothpick comes out clean. Remove from oven and let cool in loaf pan for a few minutes. Remove from loaf pan and let cool on a cooling rack.

Loaf freezes well.
