Sweet Potato Hash
Ingredients: makes 6 servings
1/2 an onion, diced
1 lbs country sausage*
3 tsp cumin
1/2 tsp cayenne pepper (or a dash if you’re a wimp, but don’t skip out)
1 lbs sweet potatoes/yams, peeled and grated
3 Tbs butter (I usually end up doing about 1 1/2 Tbs)
salt and pepper to taste
fried egg (optional, but oddly incredible)
In a large skillet over medium heat, cook onion and sausage until meat is fully cooked and onions are translucent. Add spices and cook for 1 minute. Add yams, butter, salt, and pepper. Stir well. Cover with a lid and cook until sweet potatoes are tender, stirring occasionally. Serve with a fried egg on top and lima beans on the side.
*if using plain ground pork, add the following spices per 1 lbs of meat:
1 tsp ground sage
1 tsp salt
1/2 tsp pepper
1/2 tsp oregano
1/4 tsp paprika
1/8 tsp thyme
pinch of ground cloves
