Mandarin Orange Chicken Quinoa Salad
Ingredients: makes 2-3 servings, doubles easily
1/2 cup uncooked quinoa
1 cup water
2 green onions, sliced
handful of raisins (optional)
handful of toasted pine nuts or slivered almonds
1 can mandarin oranges
1 cup cooked chicken, chopped
drizzle of olive oil to taste
splash of apple cider vinegar to taste
salt and pepper to taste
In a fine-mesh strainer, rinse quinoa under running water until water runs clear. In a small saucepan, combine quinoa and water and bring to a boil. Reduce heat to low, cover, and simmer until water is completely absorbed- about 25 mins.
While quinoa is cooking, combine the next 5 ingredients in a large bowl. Drizzle with oil, splash with vinegar, and season with salt and pepper. When quinoa is done, fluff with a fork and add to the mixture. Mix well and taste to adjust oil, vinegar, or seasoning. Serve chilled or at room temp.
