Breakfast Frittata
1. Heat butter/grease in a pan or skillet on medium low. If cooking bacon or sausage from raw, cook meat. Add onion and cook for a couple minutes. Add zucchini and cook until onions are tender/translucent. Add mushrooms and cook for about 3 minutes. Add garlic and cook for 30 seconds. Take off heat and cool while preparing egg mixture.
2. Beat the eggs in a medium bowl. Add the rest of the ingredients for the egg mixture and beat to combine.
3. Add mixins to egg mixture and if using diced ham, add now, mix to combine.
4. Pour mixture into greased pie plate. Bake in oven for 35-40 minutes, should be golden on top. If you’re feeling fancy, sprinkle some more parmesan on top. Let cool before serving or storing in fridge. Perfect for a quick breakfast!
Quick tip: pour into a greased muffin tin for a grab and go breakfast!
